Ground mace

Both Mace and Nutmeg are derived from the fruit of the same tree, Myristica fragrans. Mace is the thin, bright red aril or lace-like covering more than the shell of the Nutmeg. Its flavor is similar to Nutmeg but more delicate.
Mace is used in soups, cream sauces, lamb, chicken, potted meats, cheeses, stuffing, sausages, puddings, ketchup, baked goods, and donuts. It is utilised in French, English, Asian, West Indian, and Indian cuisines, and the spice blends garam masala, curry, and rendang.
The primary supply of Mace is Indonesia. Historically, Mace originating from the East Indies has been regarded premium due to its bold orange color, wealthy flavor and higher volatile oil content. Mace made in the West Indies is yellowish in colour and has a milder flavor.
Till the 18th Century, the world’s only source of Mace and Nutmeg was the area known as Indonesia. When the Dutch took control of this region, Mace and Nutmeg had been amongst the richest prizes. Realizing these spices did not grow elsewhere, they proceeded to establish one particular of the tightest monopolies the planet has ever recognized. There is a legend that it was a Frenchman who started the erosion of Dutch handle by smuggling seedlings out of the East Indies. Accurate or not, it is a reality that a series of transplantings did happen and a number of other places began creating these spices.

Summary: When this photograph was distributed, Anna Chao Pai (b. 1935) was a predoctoral student in the Department of Genetics, Albert Einstein College of Medicine, functioning with Dr. Salome Waelsch on developmental genetics and cross-breeding unique strains of mice. The granddaughter of a Chinese warlord (Marshal Chang Tso Lin), Anna Chao had immigrated to the United States in 1940 with her family and had graduated from Sweet Briar College in 1957. Author of Foundations of Genetics (1974) and other operates, she described her outstanding life journey and profession in remarks ("Challenges, Privilege, and Obligation") delivered at the Sweet Briar College Commencement, Might ten, 2008
